Details:
The Sbriciolona is a typical Tuscan sausage, prepared with minced pork flavored with fennel seeds and dipped in red wine. For its preparation, 50% of the dough is from the shoulder part, 25% bacon and 25% throat. Everything is stuffed into a natural casing, it is left to mature for about 2 months.
